Oven Baked Banana Pancakes

I hated making pancakes! batch after batch after batch. While the first person was done with their first pancake waiting for more and you are in the kitchen just waiting and starving. Flip, wait, flip, wait. It’s awful. That is why i was amazed when I discovered oven baked pancakes. Thry are good! They are fluffy! They are delicious. Here is my take on them.

2 cups all purpose flour

2 tablespoons sugar

2 teaspoons banking powder

1 teaspoon baking soda

2 teaspoon cinnamon

1 teaspoon nutmeg

1 teaspoon salt

2 tablespoons butter

2 cups buttermilk

2 large eggs

3 bananas

1 teaspoon vanilla

Preheat the oven to 425. Butter a baking dish and line it with parchment paper. The butter will help the parchment paper stick to the dish.

Mix together your flour, sugar, baking powder and soda, the cinnamon, nutmeg and salt. In a separate bowl add your butter which should be slightly melted, buttermilk, eggs, vanilla, and mashed bananas. You can reduce your bananas to 2 but I enjoy 3 as it makes the pancakes moist and more flavourful.

Using and paddle attachment, mix your wet ingredients and slowly pour your dry ingredients into the mixer. When it’s all mixed, pour the mixture into your baking dish and spread it evenly.

Put your pancakes into the oven and cook for 15 mins. A skewer should come out clean. Let it cool in the pan for 5 minutes. After your 5 minutes, put a breadboard over your dish and flip the pancakes onto the breadboard. Cut it into 8 squares and serve with maple syrup and powdered sugar.
